If you really want high ISO performance, go for the 5D or 1D3..
The D200 or D80 are fine. Not the best at high ISO, but close enough (as is your D40). No need to sell your lenses and switch systems, unless you feel a compelling want/need to..
Maybe the salesman was pushing the 30D because he wants to clear stock? The 30D replacement announcement is rumored to be next week..

I have to agree with the last poster. I wouldn't pay much attention to the salesman he/she may have ulterior motives for wanting to sell the Canon or he may not be the expert he pretends to be..
I use Canon cameras but I have to say that Nikon is every bit as good, for most people. If you have a large investment in Nikor lenses, Stick with Nikon!.
That's one of the big reasons I use Canon. I love their cameras but even if I didn't love them I couldn't afford to switch brands...
Agree with all of the above! Do not EVER EVER listen to advice from camera salesmen trying to sell you the cameras. Anyone who wants to convince to switch over a $1200 investment in lenses over a single body is just spouting bologna..
Instead, listen to advice from all your forum friends ..
Now that that's out of the way, I would ask, what is it the D200 can do that your current D80 can't? The D80 is a very competent camera, and for the things you listed (low light, night photography, people, landscape, nature), the D200 wouldn't give you much advantage over the D80...
The salesman is a shark. The Canon 30D is about to be replaced and he wants to offload stock before the prices fall. It is the lenses (and skill of the photographer) that determine what the picture looks like. if you are happy with your Nikon lenses keep them and get a Nikon body.Mike..

Mostly agreed. Main advantages of D200 vs D80 are build, frames-per-second, and overall handling. Main disadvantage is price. It's the OP's call as to what's most important..

I have the D40, so...the D200 would offer more flexibility in lens use, possibility of finding older Nikon glass at used prices...also more advanced exploration into flash technology....and I like having more incremental choices in ISO settings..

Whoops, I must have read that wrong. For what it's worth, I might take a look at the D80 body as well, which is considerably cheaper and does probably 90% of what the D200, for your subjects (you could use the extra money for lenses or flashes or other gear)...
