Well, for simple "point and shoot", I would go for either Canon or Sony. The Fuji F20/30/40 series is a really great line of cameras, but I think to make really good use of it, you'll have to know how to adjust ISO, and how to clean up noise (in essence, not the best cameras to leave on full auto). The image stabilization available on the SD800 and Sony's T100 works more automatically - just leave it on all the time and don't worry about it..
The SD800IS has the advantage of wider angles (28mm), while the Sony T100 has a longer zoom reach (175mm). General, I think the 28mm is more useful (capture tall buildings, wide landscape scenery, indoor group shots better), but your usage may vary. However, the SD800IS is a bit "soft" at the wide end, although to be fair most of the problems clear up at 35mm, where other cameras start...

Among the Fujis, the F31fd is probably a better idea than the F40fd..
As Nathan said above the SD800IS starts at 28mm wide which would be helpful for your subjects of interest. But the Fujis are not that far off I believe, somewhere in the early 30s. The T100 uses folded optics and it's the first such 5x lens from Sony. I would rank it #4 on your list based on your target subjects..

Heh, how I would wish for a Fuji that started in the early 30's. Unfortunately, they are all at 36mm, which is quite a ways off frum truly-wide 28mm ..

Is adjusting ISO something that can be learned with some quick reading (manual and/or photography for dummies type book?) on a 5 hour plane ride or is it something I need real training for?.

Also, if there are any other cameras you guys would recommend given my criteria, that would also be appreciated... I'm not locked into those 4, they just seemed like the best from my research on this site and others...
